Caol Ila 35YO Director's Special Single Malts of Scotland

This bottling received a whopping 92 points on Whisky fun back in October!

Only exceptional whiskies are selected by their director to be bottled for this exclusive series from The Single Malts of Scotland. Each bottling is aged to perfection, celebrating both the classic characteristics of the distillery and the subtle changes created by time and oak.

Only 144 bottles were produced from a single cask of Caol Ila Single Malt Scotch Whisky, which was aged for more than 35 years.

Tasting notes:
Nose: Charcoals on the sand - kippers and lemon slices are drizzled with olive oil and grilled on the beach. When it starts to rain, seek shelter in the tool shed among waxed jackets, pine resin and jars of wood tar.

Palate: Sweeter than the nose would lead you to believe; tuck into maple-smoked bacon, apples, cinnamon, brown sugar, liquorice and aniseed. A savoury note slowly emerges of charred sweet potato and green peppers.

Finish: Soft but intense smoke notes - a wood-fired sauna accompanied by melted caramel, kola nuts and just a pinch of sea salt.
